This milk chocolate bar contains roasted Oregon hazelnuts and chopped up in milk chocolate. The bar also contains 55% Alexandrea Family Farm A2/A2 milk.

From the company, Traditionally, cows produced milk with A2/A2 beta-casein protein. Over time, a mutated A1 gene worked its way into dairy cattle. Cows today produce a combination of A1 and A2 proteins, creating a type of milk that is relatively new to the human body and may be more difficult to digest. We choose cows that while roaming our pastures only make A2/A2 milk. It’s most natural to the body and easily absorbed. You can trust that our milk is always 100% pure A2/A2.

Maple sugar and Trinitario cacao come together in this bar for a sweet, yet dark chocolate bar. The maple sugar adds a bit of sweetness to the bar, but you still taste the bitterness of the dark chocolate.

From the company, Maple sugar is made by evaporating the water from maple sap, leaving behind pure maple sugar crystals. Maple sugar tends to have a sweeter taste. Paired with a bold fruit forward Trinitario cacao, the resulting chocolate bar has a unique flavor profile that we think you're going to love.

This bar was my husband's favorite. The banana infused chocolate bar has the right balance between banana and chocolate.

From the company, The Polynesian settlers brought with them mai'a (banana) on their long voyage to Hawaii. It is known as a canoe plant – a crop essential for island living. Not only was mai'a used as sustenance, but as an offering to ali'i (ruling chief), a highly regarded gift, and as medicine for various ailments. Fruit was scarce in ancient Hawaii and banana was one of only a handful available.

My husband and I both thought the bourbon taste would be a bit more pronounced.

From the company, The tuxedoed sophisticate in the family. We age single origin Tanzanian cacao in bourbon casks for two months, creating a deeply nuanced bar with a cocktail-like vibe: oaky and smooth, with a hint of cherry cordial on the finish. Our best selling bar and 2013 Good Food Award Winner.

This bar was my personal favorite. It is your traditional dark chocolate bar with the sharp bitterness and a slight sweetness.

From the company, From way up high in the mountains of the Waslala region of Nicaragua is where Blanxart discovered the unique criollo and trinitario cocoa beans that go into their organic 85% chocolate bar. With flavors of lemon, orange, pineapple, jasmine,and nuts, these beans are rich and complex, but without the typical bitter edge that can come with lower-grade beans. Blanxart, a bean-to-bar artisanal chocolate producer based in Barcelona, Spain, has been making chocolate since 1954, and were pioneers in the bean-to-bar craft chocolate movement. Blanxart continues to seek out the best beans from all over the world, and in this case have done what they do best, turned them into a smooth chocolate representative of the eco preserve where these beans are grown. This sense of terroir is what makes their single origin chocolate bars so special.

Criollo and trinitario beans represent a very small percentage of the world’s cacao production, as they yield fewer beans and are of higher quality. These beans come from Nicaragua’s Bosawas Nature Preserve which is one of the largest in Central America. Blanxart has formed a partnership with a handful of farmers, working as a cooperative, who organically cultivate these beans on small seven acre farms. The farmers are paid fairly and work to make their production more sustainable – both for people and the planet.

Final Thought: Kekao delivered an excellent box this month. The chocolate made for a fun “date night” at home! We loved trying the new kinds of chocolate in the box.
