In April, RawSpiceBar traveled to South Asia with recipes and spices inspired by the Indo-Persian fare. This culture's cusine is full of a broad spectrum of spices, from sweet to salty and warm to spicy.  Parsis, who settled on India's West coast from Iran in the 8-10th centuries, brought with them a rich cooking tradition of stews, meat, sour flavors and dried fruits.  The deep, complex, sweet-sour flavors of Parsi cuisine combine beautifully with the deep, earthy spices of Indian flavors.

JARDALOO MA MURGHI (INDO-PERSIAN CHICKEN CURRY)

Jardaloo Ma Murghi (Indo-Persian Chicken Curry): This is a traditional Parsi dish filled with Indian spices and combined with Persian influences of dried apricots and lots of onions.  Add some chicken, the spices and follow the recipe for a delicious stew-like dish!

Kachumber Salad:  The black salt, cumin and chile blend of spices paired with onions, tomatoes, cucumbers, mint, coriander and lemon juice combine to make a delicious traditional salad – perfect for summer!

ROSE & CARDAMOM KULFI

ROSE & CARDAMOM KULFI

Rose & Cardamom Kulfi: Is it yogurt? Is it ice cream? It's kind of a hybrid.. the recipe calls for milk, sugar, rice or corn flour, pistachios, almonds and the spice blend.  Can be served cooled or frozen.

Here's a closeup of the spices for the rose and cardamom kulfi.

Final Thought:  RawSpiceBar is a great subscription for people who love to try new things in their cooking and experience different flavors from around the globe.  Each month features a new theme and corresponding spices.  It's only $6.00/month, so what do you have to lose by trying it?
