The Box
I loved the box, it looks like a piece of wood.
First Look
Information Card
The information card includes pictures, names and information about each meat.  There is also a monthly paring suggestion.  This month, Carnivore Club recommends the 2010 Sofos Red Blend from clubw.com.  Salty, porky flavors go great with the Sofos.  Carnivore Club included a code so you could get your third bottle free form ClubW.
Ice Pack
Club W included an ice pack with the meat.  The ice pack was still cold, along with the meat.  C is very particular about food temperature, and he thought the meat was packaged well.
Elk Terrine
From Carnivore Club “Spiked with black peppercorns and wrapped in Smoking Goose's house cured bacon, Cold Smoked Elk Terrine begins with elk raised on wide open pasture at Carley Elk Farm in Atlanta, Indiana.  Trimmed by hand, this country style terrine brings layers of flavor after a long, low, and slow cold smoke over fruit wood.”
I have never had pate before this, and I was a bit nervous.  The name sounds stranger but it had a great flavor.  We had it over crackers and you could take the smoky flavor.
Soppressata

From Carnivore Club: ” A bloomy rind develops as this Sopperssata ages slowly and under the pressure of pressing.  The coarsely ground pork salami is about 3 inches in diameter and flecked with ground clove, ginger and nutmeg.  Soppressata is a staple of any cured meat lover's daily must haves”
This was one of C and I's favorite meats.  I normally don't like salami, but the added spices made this taste very good.
Dodge City
From Carnivore Club ” Named after the neighborhood “Dodge City”, this salami is strewn with fennel pollen and stuffed pink peppercorns for the quick pop of anise.  It's a lean giants that is speckled with a quilted patten of back fat.  This salami uses all natural sewn casing, keeping with Smoking Goose's commitment to using the best ingredients available to produce great products.”
C and I were not fans of this one, the flavor and texture were just a little too different for us.
Guanciale Pork Jowl
From Carnivore Club: “Heavily spiced with bay leaves, garlic, juniper berries, sea salt, brown sugar, and black peppercorns, these cured hog jowls are more flavorful and densely textured than their belly-cut cousin, pancetta”
Wow, this pork was amazing.  C and I both loved this and this was our favorite meat out of the box.  We cooked it up and it was fantastic with eggs.  I will be ordering more of this!
Delaware Fireball

From Carnivore Club ” The Delaware Fireball was one of the Smoking Goose's first unique creations.  It gets it's name from the street where the meatery's public butcher shop is located in Indianapolis and the salami's fiery taste.  This crepitate salami of coarsely ground pork is packed with crushed chilies and garlic.  It's wrapped in a caul fat, dry aged and cold smoked in an oven of hickory wood, making one spicy salami.”
This had a great flavor and I didn't actually taste the spices, until I swallowed.  It has a serious spice to it, but I nice flavor.
The Whole Box

Final Thought: This is a great unique box.  I am sure I got $50.00 worth of meat from this box.  Carnivore Club is a great box for those people who enjoy charcuterie.  The meat is not only tasty but comes from independent farms in the Midwest.  This box exposed C and I to many different meats, that we may never have tried otherwise.  I love that the Smoking Goose,  is located in Indiana (my home state).  I also love, that everything is independent and done with such artistry. The pork jowl is my favorite from this box, and I will be getting more.  This will make a great addition to our Christmas breakfast.  If you are interested in signing up for Carnivore Club, click HERE and use the code “boxmom” to save $10.00.  Residents of Canada go HERE.
