Hi all!  It’s Kristi doing another guest review, and this time I’m doing another meal subscription box review.  I love to cook, and have now tried several Blue Apron boxes.  I’m super excited to try some more fancy recipes this week!  Last week was a bit of a miss, but this week's look really good!

Blue Apron is a meal subscription box that sends you delicious recipes and all the ingredients you need to make the dishes.  There are two plans, a two-person plan and a family plan.  The two-person plan is $59.94/box or 9.99 per serving.  The two-person box includes two plates of three different meals (six services).  The family box is $69.92/box for two four-person meals, (eight services) or $8.74/serving.

When you sign up, you check all the kinds of food you like.   Each week, you will be sent meals based on your preferences.  Shipping is free and you can skip any week or cancel any time.DSC_0726

This week, we just got shrimp.

First off was the Ricotta & Beet Grilled Cheese Sandwiches with Persimmon and Marinated Fennel Salad. I was pretty excited about this one.  A prior box made me realize how much I liked beets, and this intrigued me.

Yum!   This recipe allowed me to try new things, and I loved it!  I had never had persimmon or fennel before, and the salad was soooooo good.  I may make this recipe again!  My husband said, “I don't know who thought to put beets on grilled cheese, but it's amazing!”  It was a fairly easy meal to make too!

Next up was White Bean & Vegetable Minestrone.  I was excited to see a soup to try, as I love soup in the fall!

I love that the instructions make it easy to keep everything cooking at the right time!

Finished!  So, this made four giant bowls of soup (the leftover from two bowls is on the right).  We were able to have lunch the next day too!  I added extra parmesan and crackers, because I love soup with crackers.  I had never tasted minestrone, and this was excellent and easy to make too!

Last was Shrimp & Shitake Dumplings with Seasoned Bok Choy and Soy Dipping Sauce.  I thought this one looked super yummy!

There was some issue with my cooking I guess, as the wrappers wanted to stick to the pan…but it didn't ruin them.

My husband said this was the best Blue Apron Meal yet.  It was also the most difficult and time consuming to cook.  There was plenty of food, and  I love that there was shrimp this time!  The sauce was amazing and simple.  If they weren't difficult to make (for me, at least) I'd definitely make this again!

Final Thought:  This week definitely redeemed after last weeks failures!  We loved all of the recipes and got to try several new things!  A few tips-ALWAYS HAVE OLIVE OIL!  Most all recipes call for some olive oil, and that’s the only thing not included.  KEEP THE GARLIC CLOVE! Usually, more than one recipe calls for it.  I always managed to throw it away, then need it (but not anymore).  The downside is my kids aren’t super excited about the selection/we’d have to up to a four person box if they would. They did eat some of the minestrone this week, so that was a win! If you have a busy schedule but love to cook, this would be a great option to try!
