This month, Spiced Pantry is exploring Lebanon!

The information card gives a brief introduction to Labanese cuisine, along with a list of ingredients.

There were six recipes included in all.  Maghmour (Eggplant Stew) was perhaps the most unusual dish of the six.  I have never cooked with eggplant, so this will be an interesting recipe to try.  The Shish Tawook (Chicken Kebabs) look the tastiest to me.  Fattoush (Bread Salad) is one of the appetizer recipes included.

The remaining three recipes were a mix of appetizers and a main dish.  I am really looking forward to making the Kibbeh Bil Snieh (Meat Pie).  This dish is made to be used with ground lamb, which is a great tasting meat.  The Bab Ghanouj (Eggplant Dip) and the Tabbouleh (Parsley Salad) are two great appetizers you can use to make Lebanese mezze which is a tradition of serving several small appetizers together.

Sadaf Ground Sumac

Sadaf Ground Sumac  This is a lemon flavored spice used for the Shish Tawook (Chicken Kebabs).

Sahadi Fine Bulgur

Sahadi Fine Bulgur There was 16 ozs of ground wheat that can be used in the meat pie and parsley salad recipe.

Sadaf Green Zatar Mix

Sadaf Green Zatar Mix You can mix this with olive oil to make a dipping sauce for bread.  It is made with a blend of thyme, sesame seeds and sumac.

Cortas Pomegranate Molasses

Cortas Pomegranate Molasses This pomegranate juice has been reduces and has a tangy flavor.  You can use this in meat pies and salads among other things.

Al wadi Tahina

Al wadi Tahina This container is simply huge! This is a paste made of sesame seeds that you can use in dressings, sauces and dips.

Adonis Spices Allspice

Adonis Spices Allspice This is a mix of cloves, cinnamon and nutmeg that can be used in stews, and any meat dish.  This will be a great spice that I can use in dishes I cook.
